Sinigang

Warm up with sinigang, a comforting Filipino sour soup made with tamarind broth, fresh vegetables, and your choice of pork, chicken, shrimp, or beef. This tangy and hearty dish is the ultimate Filipino soul food for any weather.

Ingredients

  • 1 kg pork ribs or beef brisket
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 2 cups taro, peeled and halved
  • 2 cups green beans
  • 1 bunch water spinach (kangkong)
  • 1 radish, sliced
  • 2 litres water

      Boil the Meat: In a large pot, bring water to a boil. Add the pork or beef, onion, and tomatoes. Simmer for 1–1.5 hours until the meat is tender. Skim off any scum that rises to the surface.

      Add Vegetables: Add the taro and cook for 10 minutes. Then, add the radish and green beans, cooking for another 5 minutes.

      Season with Tamarind: Stir in the tamarind soup mix or paste and fish sauce to taste. Adjust the sourness and saltiness as desired.

      Finish with Greens: Add the water spinach last and cook for 1–2 minutes until wilted.

      Serve and Enjoy: Serve hot in bowls, accompanied by steamed rice for a comforting, tangy meal.
