Traditional Sinigang (Filipino Sour Soup)

Ingredients

  • 1 kg pork ribs or beef brisket
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 2 cups taro, peeled and halved
  • 2 cups green beans
  • 1 bunch water spinach (kangkong)
  • 1 radish, sliced
  • 2 litres water
  • Tamarind soup mix or tamarind paste, to taste
  • Fish sauce, to taste

What you will need

  • Large pot
  • Ladle
  • Knife and chopping board

Cooking Instructions

1. Cook the meat
In a large pot, bring the water to a boil. Add the pork ribs or beef brisket, onion, and tomatoes. Reduce to a simmer and cook for 1 to 1.5 hours, or until the meat is tender. Skim off any scum that rises to the surface.

2. Add the vegetables
Add the taro and cook for 10 minutes. Add the radish and green beans, then cook for another 5 minutes until the vegetables begin to soften.

3. Add the tamarind flavour
Stir in the tamarind soup mix or tamarind paste and season with fish sauce to taste. Adjust the sourness and saltiness to suit your preference.

4. Finish with the greens
Add the water spinach and cook for 1 to 2 minutes, just until wilted.

5. Serve and enjoy
Serve hot in bowls with steamed rice for a comforting and tangy Filipino meal.
