Bring the comforting flavours of the Philippines to your table with Kare Kare, a rich and hearty Filipino peanut stew made with tender meat, eggplant, green beans, and a thick savoury sauce. Traditionally served with bagoong on the side, Kare Kare is a much-loved Filipino classic that is perfect for family meals, special gatherings, or whenever you want a deeply satisfying dish.

Ingredients

  • 1 kg oxtail, beef tripe, or pork hock/knuckle
  • 1 cup peanut butter
  • 2 tablespoons annatto powder or 2 annatto seeds, optional
  • 2 cups eggplant, sliced
  • 1 cup green beans
  • 1 banana heart, sliced, optional
  • 4 cups water or beef broth
  • 1 tablespoon olive oil
  • 2 tablespoons toasted rice flour
  • Fish sauce or salt, to taste

To serve

  • Steamed rice
  • Bagoong (fermented shrimp paste)

What You Will Need

  • Large pot
  • Small saucepan
  • Whisk
  • Knife and chopping board
  • Serving bowls

Method

1. Cook the meat
Place the oxtail, beef tripe, or pork hock/knuckle into a large pot with water or beef broth. Bring to a boil, then simmer until the meat is tender, about 2 to 3 hours. Remove the meat and set aside, keeping the broth in the pot.

2. Prepare the annatto oil
Heat the olive oil in a small saucepan. Add the annatto powder or annatto seeds and stir until the oil turns a deep golden red. If using seeds, strain them out before using the oil.

3. Make the peanut sauce
Add the annatto oil, peanut butter, and toasted rice flour to the broth. Whisk until smooth and well combined. Simmer for 5 minutes until the sauce begins to thicken.

4. Return the meat
Add the cooked meat back into the pot. Season with fish sauce or salt to taste. Simmer for another 5 minutes until everything is heated through and the flavours are well combined.

5. Add the vegetables
Add the eggplant, green beans, and banana heart to the pot. Simmer for about 10 minutes, or until the vegetables are tender.

6. Serve
Serve hot with steamed rice and bagoong on the side for a traditional Filipino meal.
